Ingredients:

For the Stuffed Bell Peppers:

4 large bell peppers

1 cup quinoa, rinsed

2 cups vegetable broth

1 can (15 oz) chickpeas, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes (canned or fresh)

1 small red onion, finely chopped

2 cloves garlic, minced

1 teaspoon cumin

1/2 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

For the Avocado Lime Sauce:

1 ripe avocado, peeled and pitted

Juice of 1 lime

1/4 cup fresh cilantro

2-3 tablespoons water (adjust for desired consistency)

Salt and pepper to taste

 

Method:

For the Stuffed Bell Peppers:

Step 1 - Preheat your oven to 190°C.

Step 2 - Cut the tops off the bell peppers and remove the seeds and membranes. You can also trim the bottoms slightly if needed to help them stand upright.

Step 3 - In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.

Step 4 - In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and minced garlic. Sauté for a few minutes until the onion becomes translucent.

Step 5 - Stir in the chickpeas, corn, diced tomatoes, cooked quinoa, cumin, paprika, salt, and pepper. Cook for an additional 5-7 minutes, allowing the flavours to meld. If needed, adjust the seasoning to your taste.

Step 6 - Stuff each bell pepper with the quinoa and chickpea mixture, pressing down gently to pack the filling.

Step 7 - Place the stuffed bell peppers in a baking dish and cover the dish with foil.

Step 8 - Bake in the preheated oven for about 25-30 minutes, or until the peppers are tender but not overly soft.

 

For the Avocado Lime Sauce:

Step 1 - While the stuffed bell peppers are baking, prepare the avocado lime sauce. In a blender or food processor, combine the peeled and pitted avocado, lime juice, fresh cilantro, water, salt, and pepper.

Step 2 - Blend until the sauce is smooth and creamy, adding more water as needed to achieve your desired consistency.

 

To Serve:

Step 1 - Once the stuffed bell peppers are done, remove them from the oven and allow them to cool slightly.

Step 2- Drizzle the avocado lime sauce over the stuffed peppers or serve it on the side.
