Low Sugar Coconut Chocolate Protein Balls

With summer just around the corner, these low sugar coconut chocolate protein balls are the perfect protein- filled snack to give you a taste of summer!

Ingredients: 

  • Ground Flax Meal 
  • Nut/Seed Butter
  • Unsweetened Cocoa Powder
  • Chocolate Protein Powder
  • Coconut Oil 
  • Unsweetened Shredded Coconut
  • Dark Chocolate or Cocoa Nibs 
  • Maple Syrup or Honey

 

Method: 

Step 1 - Pulse the flax meal and cocoa powder in a blender and add the nut butter, protein powder, shredded coconut, and coconut oil, and blend until smooth.

Step 2 - Scoop the batter into a bowl, and stir in the chocolate chips. 

Step 3 - Form the batter and store in the fridge for 20-30 minutes.

Step 4 - Portion the dough into 12-14 equal-sized balls then roll the balls in coconut. 

Step 5 - Freeze for 15-20 minutes. After 20 minutes, store in an airtight container or Ziplock bag and keep your tasty treats in the fridge.
