For the chicken:

1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

1 cup buttermilk (or non-dairy alternative like almond milk or soy milk)

1 cup all-purpose flour (or gluten-free flour for a GF option)

1 teaspoon salt

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/4 teaspoon black pepper

For the coating:

1 1/2 cups panko breadcrumbs (or regular breadcrumbs if preferred)

1/2 teaspoon salt

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

1/4 teaspoon black pepper

For the cooking spray:

Olive oil or cooking spray



Step 1 - Marinate the Chicken: In a medium-sized bowl, place the chicken pieces and pour the buttermilk over them. Make sure all the chicken pieces are well-coated in the buttermilk. Cover the bowl with plastic wrap or a lid and let it marinate in the refrigerator for at least 30 minutes (up to 4 hours). This step will make the chicken extra tender and flavourful.

Step 2 - Prepare the Coating: In a shallow dish or plate, mix together the panko breadcrumbs, salt, garlic powder, onion powder, paprika, and black pepper. Stir until the seasonings are evenly distributed.

Step 3 - Coat the Chicken: Preheat your air fryer to 200°C. Take each piece of marinated chicken, shaking off any excess buttermilk, and dredge it in the flour mixture. Ensure each piece is fully coated with the flour mixture.

Step 4 - Dip in Buttermilk Again: After coating the chicken with flour, dip each piece back into the buttermilk for a second time. This double-dipping process will help create that extra crispy and crunchy texture, reminiscent of KFC popcorn chicken.

Step 5 - Coat with Breadcrumbs: Next, coat the chicken pieces with the seasoned panko breadcrumbs. Press the breadcrumbs gently onto the chicken to ensure they stick well.

Step 6 - Air Fry the Popcorn Chicken: Place the breaded chicken pieces in a single layer in the air fryer basket, making sure they don't overlap. Depending on the size of your air fryer, you may need to cook the chicken in batches. Lightly spray the chicken with olive oil or cooking spray to promote crispiness.

Step 7 - Cook in the Air Fryer: Cook the popcorn chicken in the air fryer at 400°F (200°C) for 10-12 minutes or until the chicken is golden brown and cooked through. Halfway through cooking, shake the basket or flip the chicken pieces for even browning.

Step 8 - Serve and Enjoy: Once the popcorn chicken is done, transfer it to a serving plate.
