High protein cookie recipe

These cookies make a great post-workout snack or a tasty treat when you need a protein boost. Enjoy the delicious combination of flavours while knowing you're fuelling your body with protein-rich ingredients.

  • 1 cup almond flour
  • 1/4 cup vanilla protein powder
  • 1/4 cup rolled oats
  • 1/4 cup almond butter
  • 1/4 cup honey
  • 1/4 cup dark chocolate chips
  • 1/4 cup chopped nuts (such as almonds or walnuts)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine almond flour, protein powder, rolled oats, baking powder, and salt. Mix well.
  3. In a separate microwave-safe bowl, melt the almond butter and honey together until smooth. You can microwave it in short intervals, stirring in between.
  4. Pour the melted almond butter and honey mixture into the dry ingredients. Add the vanilla extract and stir until all the ingredients are well combined.
  5. Fold in the dark chocolate chips and chopped nuts. The dough should be thick and slightly sticky.
  6. Take tablespoon-sized portions of the dough and roll them into balls. Place the balls onto the prepared baking sheet and flatten them slightly with your palm or the back of a spoon.
  7. Bake the cookies in the preheated oven for 10-12 minutes or until the edges turn golden brown.
  8. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  9. Once cooled, store the high-protein cookies in an airtight container.
