Easy Peanut Butter Protein Cookies

Are you looking for a tasty, timeless treat that you can make in under half an hour? Look no further, these peanut butter protein cookies are all you need!


  • 2/3 cup of coconut sugar 
  • 1 cup of peanut butter 
  • 2 eggs 
  • 2 scoops of vanilla protein powder 


Step 1 - Preheat the oven to 350 degrees. Line a baking tray with parchment paper and set aside.

Step 2 - Combine the peanut butter, coconut sugar, eggs, and vanilla protein powder in a large bowl and mix until the consistency looks like cookie dough.

Step 3 - Scoop out about 2 tablespoons of the batter and roll it into a ball using your hands. Flatten the ball in your palms and then place on the parchment paper.

Step 4 - Repeat the above process with the remaining dough, leaving space in between the cookies on the sheet so they don’t stick together. 

Step 5 -  Press down gently on each cookie using a fork to create criss-cross marks. 

Step 6 - Put your cookies in the preheated oven and bake for 10-12 minutes. 

Step 7 - Once your cookies look golden brown, remove them from the oven and let them sit for a couple minutes to set, then move them over to a cooling rack before tucking in.
