Christmas Cranberry Pecan Protein Balls

Christmas Cranberry Pecan Protein Balls

‘Tis the season to enjoy and these Cranberry Pecan Protein Balls are the perfect recipe to indulge in the Christmas treats while still maintaining your protein intake!

  • 1 cup rolled oats
  • 1/2 cup vanilla protein powder
  • 1/2 cup almond butter
  • 1/3 cup honey or maple syrup
  • 1/2 cup dried cranberries, finely chopped
  • 1/2 cup pecans, finely chopped
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • A pinch of salt
  • Shredded coconut for coating (optional)

  1. Prepare Ingredients: If your cranberries and pecans are not already finely chopped, give them a quick chop to ensure even distribution in the protein balls.

  1. Combine Dry Ingredients: In a large bowl, mix together the rolled oats, vanilla protein powder, chopped cranberries, chopped pecans, cinnamon, and a pinch of salt.

  1. Add Wet Ingredients: Add the almond butter, honey (or syrup), and vanilla extract to the dry ingredients. Mix well until the mixture comes together. If the mixture seems too dry, you can add a bit more almond butter or honey.

  1. Chill the Mixture: Place the mixture in the fridge for about 15-20 minutes. Chilling will make it easier to handle and form into balls.

  1. Form into Balls: After the mixture has chilled, take small portions and roll them into bite-sized balls. If you want, you can roll the protein balls in shredded coconut for an extra festive touch.

  1. Chill Again (Optional): For best results, you can place the formed protein balls in the fridge for an additional 30 minutes to firm up.

  1. Serve and Enjoy: Your festive Cranberry Pecan Protein Balls are now ready to be enjoyed! Store them in an airtight container in the refrigerator for freshness.
